Peanut Butter Chocolate Chip Cookies

In my opinion, this is one of the best peanut butter cookie recipes I have had. Hope you enjoy them!

1/2 c. Peanut Butter
1/2 c. Butter
1/2 c. Sugar
1/2 c. Brown Sugar
1 egg
1 c. Flour
1/2 tsp. vanilla
1/2 tsp. salt
1/2 tsp. Baking Soda
1/2 c. milk chocolate chips

Preheat oven to 350 degrees.

Mix peanut butter and butter until smooth and creamy. Gradually add in all other ingredients mixing well between additions. Spoon batter onto greased or non stick baking sheet and lightly flatten. Bake for about 10 minutes or until lightly brown on edges. Enjoy!

PB&J Cupcakes

Lets reminisce on a childhood favorite made totally adult! These cupcakes will take you right back to the past with pure deliciousness :)

What you will need:
One Betty Crocker (or favorite) yellow cake mix, eggs, oil, and water called for on cake mix box, peanut butter, favorite jelly or jam, powdered sugar, vanilla, butter.

Cake
Mix cake mix according to directions on back of box. Simple :)

















When cake is baked, and cooled, carve out a small amount of cake with a spoon.


















Once cakes have been hollowed, add a bit of jam to fill the void! I used strawberry for this recipe.


















Icing
3/4 c. creamy peanut butter
1 1/4-1 1/2 c. powdered sugar
1 stick butter
1 tsp vanilla

In stand mixer, whip butter until fluffy. Add in peanut butter, and mix throughly. Once mixed, add in powdered sugar a small amount at a time. When fully mixed, add in vanilla and whip on high for another 30 seconds. (amount of sugar will be based on thickness you personally desire for icing. You can use more or less as to personal taste)

Pipe icing on cupcakes using a ziploc bag. Be sure to seal in all jam!

Huckleberry Lemonade Cupcakes

What you will need:
One box Betty Crocker (or favorite) French Vanilla cake mix, eggs, oil, and water called for on box, about 3/4 cup huckleberries (you could use blueberries as well), 7 oz. jar lemon curd, powdered sugar, butter, vanilla.

Cupcake
Add cake mix to medium mixing bowl, reserving a few tablespoons of dry mix. Pour dry mix over berries and mix well, doing this will ensure that you have berries through out the cupcake, instead of only on the bottom. Mix cake mix according to directions on back of box. When throughly mixed, add in coated berries, being sure not to mix too much. Bake according to package direction, being sure not to overbake and have dry cupcakes.



















Icing
2-3 cups powdered sugar
2 sticks butter
1 tsp vanilla
1/2 jar lemon curd

In stand mixer, whip room temperature butter until light and fluffy. Add in lemon curd and mix throughly. Add powdered sugar in parts, being certain to mix throughly between additions. Finally, mix in vanilla at end, and mix well. (this icing can be somewhat tart, like lemonade, therefore, you may wish to add more powdered sugar to sweeten it.)

Ice cupcakes, and top with a few berries as a garnish if desired. Enjoy! And dont forget to share :)

S'mores Cupcakes

For this recipe you will need one box Betty Crocker (or favorite) chocolate cake mix, one 7 oz. jar marshmallow creme (unless you want more marshmallow-y taste), eggs, oil, water, Hershey (or favorite chocolate)candy bars, Favorite graham crackers, butter, and sugar, vanilla, and powdered sugar.

Graham Cracker Crust
1 whole package of graham crackers
6 Tbsp butter
1/2 c. sugar

Put graham crackers in ziploc (or similar) bag. Smash crackers into smaller pieces. With ziploc on counter, roll with rolling pin until crackers reach the consistency of sand. Place rolled crackers in medium bowl, and mix in sugar. Add in butter 1/2 at a time, and mix until all crackers are moist. Use about a Tbsp of mixture into the bottom of 24 lined cupcake cups. Bake at 350 for about 5 minutes or until golden brown.




Cake
For this step, this is where that semi homemade comes in...

Betty Crocker (or choice) chocolate cake mix

Mix cake by the directions on back of box. No special step involved here. When cake is done, place hershey bar into the center and slightly press down into the cake mix.

















Once all chocolate is in cupcakes, bake per the directions on the back of the cake box. When cupcakes are done, they should look similar to this...

















Now comes the fun (and might I say most delicious) part!

Marshmallow Buttercreme Icing
2 sticks butter
2 c. powdered sugar
7 oz. jar marshmallow creme
1 tsp. vanilla

In stand mixer (handheld will work), beat butter until light and creamy. Once creamy, add in powdered sugar about 1/4 or 1/3 cup at a time, beating well each time to incorporate. Once all sugar is in, add in vanilla and marshmallow creme, and beat until fully mixed.


















Place whipped buttercreme into ziploc bag, and pipe onto cupcakes. Your end result should look something like this...

First Blog

So here I am, starting a blog by the request of a friend (Tina), in order to share all the yummy recipes I am always showing pictures of on facebook. I hope that this blog is enjoyaable, easy to understand, and that people like my recipes. I will tell you now, for the most part, a lot of my cupcake recipes are "semi homemade." At the current point, I am not very good at making homemade cake, it always turns out kinda dry, but as I get better, I will be making everything from scratch! Well, I have somewhat been on a cupcake kick lately. Seems that I have so many cupcake ideas. I would love to share them with everyone all at once, so this is why I am here :)  If you have any other idea, or you try the recipes and like them, please let me know! I would love to have some feedback!
